Hi beet lovers! I’m still alive!
Wow it feels so weird and so good to be typing in this space again. This past semester gave me a nice big kick to the face. From absolutely crushing my advanced nutrition classes & research project, to having track absolutely crush me, to (literally) crushing my foot and being told I may not run again (!!!!!) life has been so all over the place. Good news though is that I survived and I’m still kicking.
To be honest, I haven’t really posted much because 1) I like/require sleep and 2) I have made like one new recipe this whole semester. But luckily that one recipe is FANTASTIC and I keep my freezer stocked with these burgers at all times. And they’re super simple to make so I have no excuse to not make up a giant batch of these to keep for weeks (or what I think will be weeks, until they actually all get eaten within a few days).

and terrifying news, I’ve started to decide what I want to do with the rest of my life and have a solid list of two dietetic internships I want to apply to! I used to think I was so much better suited for the community/communications route, but after gaining a lot more experience in the clinical/counseling side of dietetics, I’m slowly falling in love. So that’s where life is headed right now. As long as previously mentioned dream school accepts me. *does TPN calculation to prove I’m worthy*
But anyways, back to the burgers. While I really have nothing against beef burgers, most of the time they don’t really sit too well in my stomach. Plus after a convo about why tempeh is so bland and how in the world you could possibly make it taste good, I made these burgers, shared with some friends, and they loved it. Tempeh burgers saving us all *insert praise hands emoji*
- 1 package tempeh, finely diced
- 1 large sweet potato, mashed
- 1½ black beans
- ¼c oats
- ⅓ white onion, finely diced
- 1 egg or flax egg
- 1T cumin
- 2t adobo seasoning
- ½t paprikca
- ⅓c cheddar or vegan cheese
- Preheat oven to 425F.
- Dice tempeh and transfer to mixing bowl.
- Add remaining ingredients.
- Form into burgers ~3-4in in diameter.
- Bake on 425F for 25-30min.
- Flip burgers halfway through baking.
