Who out there loves tacos?! Meeeee! I think a better question would be who doesn’t love tacos. When I first heard about the Taco Cleanse, I was 100% on board. Not because I think it’s healthy or I want to lose weight or I believe in crazy diets, but because having an excuse to eat tacos for every meal would be like a dream. Last week I discovered how to make the most delicious tofu breakfast tacos and it was kind of life-changing. But I’ll save that recipe for another time.
Since fourth of July is coming up, what better time to post a taco recipe! Everyone has their own way of making tacos, but my personal favorite is to put everything in a salad, smoosh it all together and eat it with a fork. The messier the better.
- Green onions
- Black beans
- Crushed tortilla chips
- Veggie meat crumbles (or ground beef)
- 1T chili powder
- 1T cumin
- 2t garlic powder
- In a trifle bowl, layer all ingredients except meat and cilantro.
- Cook meat in a medium-sized skillet with chili powder, cumin, and garlic.
- Add meat, crushed tortilla chips, and cilantro to top of bowl and serve.
