This weekend I was finally able to take a short break from all of the stresses of school/work and decided to take a trip home. It was so so needed!
I drove home from school Thursday night and surprised my parents. I actually didn’t mean for it to be a surprise, but I guess I forgot to tell them I was coming, so to them it was a surprise. Made it more fun though!
Friday morning we went out to breakfast at this cheap little diner that was SO Indiana. It’s a typical hometown restaurant that has basically every breakfast food in the world and is packed with all of the retired seniors in town. So basically like the best breakfast food restaurant in town.
I was feeling a savory breakfast so I ordered the biscuits and gravy with potatoes. It didn’t taste awful but I probably wouldn’t order it again – the entire plate was covered in gravy so I had to search for the super soggy biscuits buried underneath. The potatoes were coated in gravy too, so basically everything tasted like gravy. How many more times do you think I can say gravy in one paragraph. Graaaaaavy.
Also my mom and I thought this was hilarious for some reason. Gotta claim your chowder before it’s gone!
After breakfast, I drove down to Lexington to visit Tito for a few days. Except I got there way sooner than I expected, so Petey and I got to hang out for a couple hours while I worked on an MNT case study.
Once Tito got home, we were both starving so we went to grab dinner. We opted for a Mexican restaurant that is typically pretty good.
Tito got the fish tacos that were so good, he was raving about for days. I mean look at those chunks of avocado. I sadly got the taco salad, which was basically just queso + peppers + maybe 1/4 cup of lettuce. I ended up asking for an entire plate of lettuce to add in just to make it somewhat more appetizing. I mean I like queso and all but.. this was a bowl of queso.
Saturday was spent in Lexington which included lunch at P.F. Changs. We got the lettuce wraps as an appetizer, followed by the Buddha’s feast bowl, which was a bunch of stir-fried veggies + rice. SO good. We were both starving by the time we got there so I didn’t even think of taking a picture, but I guess that just shows how good it was.
Around 8pm that evening we both had a random craving for pie while watching a movie (well actually Tito had a craving for pie, but as soon as he said that I was like YES WE NEED PIE), so we went to the grocery store to buy pie ingredients. We ended up buying enough for three pies, so not sure what we were really thinking, but three pies is better than no pies. We started with an apple pie that I accidentally burnt, so I turned it into an apple crisp to not look so gross.
On Sunday, I randomly woke up early and wide awake, so I decided to make banana pancakes + breakfast potatoes + french press coffee in a chicken cup. I don’t know why this chicken cup is so cute but I seriously love it.
After that, we went shopping for a bit around Richmond, followed by veggie sandwiches for lunch. Sadly it was time to leave, so I headed back home for the night, since Indy is halfway between Lexington and Peoria. My mom had pasta + marinara + freshly grown basil waiting for me, which was so satisfying. Moms always make the best food.
